Some people time things differently. Some time it when you gain control of a character after skipping a cutscene, some right as you skip the cutscene, some start time on start up of the game.
It really doesn't matter too much, it's the game play that does, but like I said, talk to them, not us.
Submit a run anyways, just mark your run as not being emulator. Site admins probably just want to see that you're actually going to run the game and not just take over a leaderboard.
Most people submit runs with video from twitch or youtube, both of which allow commenting on videos.
The best game to speedrun is the one you like, preferably the one you like enough to pour thousands of hours into, assuming you want good times.
Really all you have to do is start any run for any game, leave it running, and finish a few weeks later

Problem is there will be heavy variance I'd imagine.
WR can be 11 minutes or something and someone could have submitted a casual run at 2 hours. It only gets worse the more popular the game is.
