So, I want to start speedrunning level 2 in imaginators, but don't understand time without loads, so was wondering if using the in game time could possibly be a new way to time the game? Like, we could still have time without loads, but using in game time as well, for a different category could be more simple for begginers like me.

uhm no because the ign timer at the end wil only tell you best time you've ever gotten, and you don't have to time your runs yourself the mods will always retime the runs

Rules are similar for all levels. Start after you skip the intro cutscene, end when stars screen appear, simple. Just few of them are different, but not too much, so you can use that for timing yourself and check your improvement, and when you're unable to improve then submit your run for verification. Difference will not be much ;-)
