This was great info, and after looking into it, the special tricks are decided deterministically from a set of 10 different possible special trick sets. (Each are the same special trick pairs from the non-secret pro riders).
Since it's deterministic, you can choose a name to get a specific set if you prefer. It adds up each of the characters in the name kind of like a checksum then just turns that into a number from 0-9.
So conveniently, entering a name that is just 0 will give you the first special trick set, 1 will give the second, etc. 9 will give the final set. (And the first 10 letters of the alphabet will do the same)
Here is a table of the tricks you get for each numeric character as a custom boarder name:
