No.
A win-streak category runs into the same issues that an Iron Man category would:
The reason why I said it was a mistake is that it encourages degenerate play. Check the Smash 4 1v1 Iron Man Local leaderboard to see what I mean.
It being a speedrun means by nature it will be optimized for speed above all else, and just because something is done fast does not mean it's interesting. See the Unlock All Characters Vs., and Unlock All Characters Classic World Records for that. For Vs, 15 minutes is spent crouching and standing back up. For classic, it's 4 hours of Captain Falcon classic mode in a row. Neither of those are interesting to run (or watch) but they are very fast compared to any alternatives.
Iron Man runs are challenge runs that, when they are at their most interesting, show off the players skill at the game and proficiency with every character. They aren't interesting when it's someone seeing how quickly they can cheese an opponent, how silly of a 1 stock items on ruleset they can make, or how many times they can queue into one of their friends to throw a match for them.
The goal of the Iron Man and the goal of a speedrun are at odds with each other, and with this being a speedrun board the goals of the speedrun outweigh the goals of the Iron Man.
