Hi, I'm planning on running some of these sections for fun, what would make a speedrun be considered valid? Edit: Likely only running on mobile first

using no sort of altered version of the game with cheats (must use the offical game by watabou) and doing the requirements in your run depending on which category you're running would create a valid run.

So just simply recording the run, including run-time (in rankings) would do the trick for full runs? And how would I time partial runs? I could do an on-screen timer

The rules say that runs must be "without deaths" and I'm wondering if that means you can't use a Ankh to resurrect yourself without invalidating the run. Is this the case?

I updated the rules on those a long time ago. Using ankhs to resurrect yourself is allowed, as is a full dew vial. The deaths only consist of those which cause the "Game Over" logo to appear and immediately delete the save. Y'know, the normal stuff that would end that run.
