In the english version your crew sings some rhyming song for 2 minutes, but I know that was cut out in the german version. Apparently in the french game too?

That is correct! It's unskipable, I'm trying to learn insult sword fighting in German now to try to get my runtime down a bit! xD
I think any international version of the game had the singing section removed as it relies on rhymes and devs didn't want to go through the trouble of creating new content for each language.
oh right, no one wrote about this, we were able to find the file to swap between versions to have english text and voice while the game under the hood is in another language, this changes nothing else than allowing the song to be skipped even if the game is in english, we decided it was far to allow this

I know this is 3 years old, but just wanted to give my two cents. So you can edit files to skip the song while keeping the game in English. I'm not so involved with speedrunning anymore as I used to, and communities tend to allow such things more easily (such things as intro skip in Wind Waker and Mario Sunshine for example).
But I'm against these things. I think it's part of the game and a challenge and trial to the speedrunner to accept the game as it is. If a game has a 6 minute long intro, then you have to put up with that. I like to see it as an endurance test to the speedrunner. That being said, it's a shame to see such things allowed these days... Although they are community decisions.
So about the song skipping. Without editing files you can only skip it in other languages. So if you ask me, I think the speedrunner should have to accept the way the game is and play the non-English version. That's the endurance test to the speedrunner for this game, imo.
The game's communities make the decisions in the end, but it still doesn't feel right to me. It feels hacky and cheat-y to me. People could say "oh so you hacked that part of the game".
imo people can say what they want, I care about fair competition, which involves two things, fairness, the obvious one, but also competition, in the sense that you need people to actually run the game, and given that memorizing insults in another language really doesn't feel like one of those skills that people run this kind of game for I'm all for doing the smallest possible hack that makes the song skippable in every language (and I'm going agains what's best for me, I'm italian, I could just use that version).
With that said it's not like there's one correct solution, like everything in this silly hobby it's up to the community, I tend to see it similarly to how people manage some fighting games or TCGs, where whoever made the product didn't always balance things out perfectly so you get official tourneys where some things are banned.
@mugg91 I think you have stumbled on an amazing opportunity here. You could be ushering in a new era of Curse of Monkey Island speedrunning. Here is the plan. You start streaming and speedrunning Curse of Monkey Island in a language you don't speak. Once everyone sees how much "fun" you are having they will all start switching languages. Problem solved.
