So this is an unofficial submission. Some obvious mistakes, but I like it.

"Apologies in advance for the shitty resolution.
Buffs: +9 Attack, +9 Defense, +4 MP Regen
No Anubis: Beating the boss rush with a sub-4 time and snapping up the upgrade in the secret area buffs the Anubis subweapon from 'good' to 'wtf holy shit broken OP' when it comes to boss DPS; it drops your time noticeably when you use it to clear bosses. Hence, it's not used here.
No Food Items: In this case, it's more 'me being stingy with consumables' rather than an actual limiter here. However, if one is so inclined, they can top off their mana bar with Wines so Yonathan can keep Kenshiro-ing his way through the bosses, and buff Jonathan with Carrots to give him temporary invul and increased attack power. The invul is nice but not actually needed, since you're rarely/never in danger of dying. The attack power really makes a difference with your slide damage. While strangely not buffing your double jump damage, one probably shouldn't discount a 50% increase in double jump + slide DPS.
Boss Strategies
Super Mega Ultra Sky Flying Stealth Fighting Jet Andre: Toggle Shabti before the fight, then toss a grenade as you jump, and double jump so that Jonathan's floppy ears hit Andre on the way up, and he glides into the next room. This should look smooth as heck.
Yellow Devil: Toggle off Shabti, as the DPS Yonathan has to offer here is extremely overkill. Instead, set a claymore as Andre and time the grenade tosses such that they land as the boss spawns, and pelt away with Andre's frisbee.
Train Conductor: For reasons unknown, attempting to set a pre-emptive claymore before the boss spawns will cause the claymore to explode prematurely, and it's too troublesome to set up a claymore explosion + 2 grenade tosses. Hence, just toggle on Shabti, then toss 2 grenades and pelt away. Rather boring.
Scorpion: Literally just stand there while Yonathan channels the Hokuto no Ken, then double jump and mash air slides when you can move. It's slightly RNG as to whether Yonathan will deal enough DPS to force a phase change by the time you can move, but it hardly matters.
Hapi: Switch to Andre, then mash claymore + frisbee. I actually made a mistake here by cancelling my claymore too early, but eh.
Ancient Guardian: His attacks are a bit RNG-y. Toss two grenades before he spawns, then pelt away as Andre. A better person would parry every single instance of damage so as to keep the frisbee DPS flowing and minimize the time where one isn't attacking.
Medjed: Toss a claymore such that it lands very close to Medjed as he spawns, then toss another one as he's running towards you while pressing frisbee. I messed up and didn't actually toss the claymore when I triggered the spawn.
Fernando: Get on his excavator, then toss claymores in the direction he's moving while throwing frisbees. Straightforward.
Possessed Andre: Claymoressssssssss (also don't screw up your claymore placements.)
After beating Sehur 1, toggle off Shabti. Your mana bar should be well and truly murdered by now, and Yonathan's DPS contributions at low mana are not worth the drain of keeping him on. Instead switch to grenades, then slide in place as Pharaoh!Sehur's face rises up from the ground. After that, double jumps + air slides will be your main damage, with occasional grenade tosses. Try to hit him a bit off-center, as the double jump seems to rack up a lot of hits this way. (This would be where Wine spam + eating a Carrot would actually help out here. Imagine if Yonathan had a doubled mana bar!)"
