Those features are only included in the legacy practice mod, not the normal practice mod. If you want to use those features, you'll have to downgrade your game with the 2019.11.12 downpatch, and then install the legacy practice mod. You should be fine without doing that though, since there isn't much more that's missing besides what you mentioned.

There's no accurate way to time the runs

It's not random, it has a consistent pattern:

The most used route is RRLRLRR (R = right & L = left), although there is also BRRLRLB which is slightly faster but a little harder to understand. Check out any of the top runs to see their route through the maze.
