!!! Since a recent Patch Steam disabled This Method. There is no KNOWN way except getting the files somewhere on the internet, to downpatch the game !!!
How to Downgrade to an older Patch (Steam only) [Windows] !!! This will not work for Mac or Linux !!!
Requirements:

You need the Game on Steam! (Weird I know)

AppID (For Stardew Valley: 413150)

DepotID (For Stardew Valley: 413151)

ManifestID (Version 1.0x: 3352391531516945586 || Version 1.1x: 7487215307508292747 || Version 1.2x: 5793210319202900873)

You need to open the Console in your Steam Client. (steam://nav/console) <- Put this in your browser and hit enter, without brackets.

You type in the following command and fill in the variables(Without Quotation-marks): "download_depot <appid> <depotid> <target manifestid>" -> For Version 1.0x "download_depot 413150 413151 3352391531516945586"
-> For Version 1.1x "download_depot 413150 413151 7487215307508292747"
-> For Version 1.2x "download_depot 413150 413151 5793210319202900873" -> For Version 1.3x "download_depot 413150 413151 3080804457574934302" -> For Version 1.4.0 "download_depot 413150 413151 2373680906867811602"

Wait for Steam to download the depot. You won't see any indication of progress, but you can tell it's downloading by looking at the network usage on your downloads page. The download can pause/resume if your connection goes out, but won't if you restart the client.

After the download is done, Steam will show you where the files were downloaded to.

Go to the game's installation directory, and move the files somewhere else. Then go to where the depot files were downloaded to, and move everything over to the game folder.

You should now be able to launch the old version through Steam.

Updates to Manifest-ID's will happen when game gets new major Updates and older Versions are needed. _
Mac and Linux downgrades will follow shortly, we want to check the Versions first.
For the Actual Version, check the Integrity of the Game Files. The game should update itself back to the newest version. If that doesn't work, move the old version somewhere and put back in your newest version and try again.
