Is there a place where I can view the stats for all encounters in the game? I want to route some of the longer categories, and all the encounter stats would make doing this a lot easier.

Wasn't exactly what I was looking for, but thanks anyway! I've decided to go and watch some wrs and edit the Ring Fit Wiki myself. Hopefully this will help someone else.
