I'd say the difficulty of each version is roughly the same, but the original flash version might be slightly easier as there's less customers and ingredients compared to the remakes.
If you're still able to play flash games in the browser (such as using the y8 browser), you can use the official site to play the game: https://www.flipline.com/games/papaspizzeria/
https://www.speedrun.com/plcategoryextensions/resources has links to download the SWFs, as well as Adobe Flash Player Projector which is used to run the SWFs. There is also a video tutorial to show you how to set this up.
Additionally, the top runs tend to use the pre-manipulated SWF file, which can be downloaded from here: https://www.speedrun.com/papas_pizzeria/resources (The original version of the game has a feature where the last customer of each day orders the shortest possible cook time. These cook times are never reset, and you could repeat this for every customer in the game besides Papa Louie. However, doing so takes forever to set up, so this file sets every customer's cook time to the minimum to avoid the lengthy set up.)
Here is the site with the game download: http://www.flipline.com/freegames.html Just scroll down to papa's pancakeria, click download, then make sure to extract the .zip file once it has finished downloading. If you need an SWF file player, here is one that I recommend: https://web.archive.org/web/20220330223923/https://www.adobe.com/support/flashplayer/debug_downloads.html
As long as the version of the game you're playing has Flipline ads and doesn't have any unapproved cheats/mods (e.g. always perfect scores), then the run should be fine.
I usually end my timer once I quit to the main menu on the day I reached rank 5.
The flash player projector is allowed.
