I'm new to speedrunning this game and I have a question regarding video evidence.

Do you have to keep the videos up on Youtube or Twitch after they have been verified or is it ok to take them down after verification?

Yes, verified records need to maintain their validity if it's to keep a space on this site.

Typically, if a run gets reported as having a broken link, then that runner is asked to update the link or it gets removed. You can set your videos to unlisted (not private) if you don't want your run in the general public space.
