There are separate categories for JJ100% for each difficulty if that is what you are asking. For the platinum trophy speedrun if that is what you mean by 100% you can play on any difficulty but you usually play on proud because all of the trophies for completing the game on lower difficulties get acquired on completing a single proud mode playthrough.
100% doesn't really have any difficulty attached to it as it's a legacy / dead category. The only reason it still exists on the leaderboards is due to there being a run, however that one doesn't even have a video remaining. If you want to look for a "good" 100% category you might want to look into JJ 100% or Platinum Trophy RTA.

About a month ago, sh2_luck released a patch for the Original PS2 Versions of Kingdom Hearts 1 that allowed for cutscenes to be skipped. Final Mix PS2 support was not included in the previously released patch version, but as of this release version Final Mix PS2 is now supported!
