I've noticed that on keyboard, you can move in one direction while facing the opposite, but with controller this is not possible.

Yes i enjoy the ability to strafe. Haven't played with controller so can't really compare the two when it comes to how much that actually benefits the player.

I feel like fine tuning things like spear charged attacks would be easier with the flick of the mouse but also keyboard having a limit of 8 directions can be detrimental to rolling. Especially when trying to roll through a virgin orb for the perfect dodge stamina.

Keyboard + Mouse is super effective to use Spear spins ! You can control more precisely where you want the tip of the spear to be. For everything else in the game, I guess it's only user's choice ¯_(ツ)_/¯

But if you want to go purely by weapon stats, as long as Windfury Pike is basically the best weapon in the game, I'd recommend Keyboard + Mouse.
