I would like to do a run using oculus quest 2, but I'm not certain which category it would fall under. The controls are most similar to console, but the oculus version is also based on windows 10, in which case it would be a PC run (with a ton of disadvantages because of lack of buttons).
Would it be possible to create a new category so Oculus is separate from the rest?
Upon reading the official rules at: https://git.mcbe.wtf/MCBE-Speedrunning/Speedrunning-Rulebook/src/branch/master/platform/README.md#virtual-reality I would see it would fall under PC.

After completing a Top Run (Top 5 Main Category/1st ILs), you must exit the world and go to the main menu.
For top Windows runners, you still have to do PowerShell verification.
