I plan to speedrun this game in the future but I would like to run it how it's intended to be played without needing to perform the out-of-bounds tricks.

If you have an idea for a category you can submit it to the category extensions under Submit Category (https://www.speedrun.com/racextras). However, I don't think anyone would be interested in a glitchless category because it wouldn't be interesting or fun.
