should i start counting since i start the first race till i get to the "you are the best driver in the world" message that you get once you beat the final challenge?

Sounds fun! I think you could time it in full like that, but you could also combine all of your in-game times too at a website like http://www.unitarium.com/time-calculator then you have a nice combined in-game time as well.
