Can this be completed in multiple sessions?

Didn't see anything in the rules allowing or disallowing.

My thought is that if full time is accounted for it shouldn't matter.

Splits are generally allowed yes, you'll just have to carefully record every entering of save, essentially just be able to show you have not altered your world between recordings. Also ideally make a playlist of all parts of your run for example through youtube videos.
