Here's a basic recipe for a classic vanilla sponge cake:
Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 cup (240ml) milk, at room temperature
- 1/2 cup (120ml) vegetable oil or melted butter
- 3 large eggs, at room temperature
- 2 teaspoons vanilla extract
- 2 teaspoons baking powder
- 1/2 teaspoon salt
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper.
- Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- Mix Wet Ingredients: In another bowl, beat the eggs lightly. Add the milk, vegetable oil or melted butter, and vanilla extract. Mix until well combined.
- Combine Wet and Dry Ingredients: Pour the wet ingredients into the bowl of dry ingredients. Use a spatula or wooden spoon to gently fold everything together until just combined. Be careful not to overmix, as this can result in a tough cake.
- Divide Batter: Divide the batter evenly between the prepared cake pans.
- Bake: Place the cake pans in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Cool: Allow the cakes to cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
- Frost (optional): Once the cakes are completely cooled, you can frost them with your favorite frosting, such as buttercream frosting or whipped cream. You can also add fruit or other toppings as desired.
