Sadly, the game's checkpoint system makes skipping large parts of missions - like in Adventures With Horses - impossible but there are a few ways to save time in this game still. Countdown Skip

During the countdown to a race the game does not accept inputs and you can't even pause the game. However, when you switch to a different program on PC or go to the home screen on the Switch, the game opens the menu. Once you return to the game, you can close the menu and the game will accept inputs during the countdown which means you can start riding before the race actually starts. This works on every mission with a countdown and saves quite a bit of time over the course of the run.

Castle Falkenstein Shortcut

Shortly before the end of the Castle Falkenstein race you can shortcut across the meadow to cross the finish line from behind. Since the timer moves down a lot faster when being off the trail you will have very little time left but if you make sure to not leave the path before the shortcut it should work out fine. Compared to riding the intended path this shortcut saves about 10 to 15 seconds.
