do you have to watch the full death cutscene and dialogue when a boss dies? or could you just exit the game and reload, specifically for the clog do you have to watch swirly D cutscene?

i do not think so

No cutscene needs to be watched however, thats only true of the last boss you complete during an all bosses run. The run ends when all bosses health are brought to zero.
