I’m new in the speed run community and I’m looking to speed run Minecraft on IOS. Any tips or advice for this?

I would look through the rules and look at what the community is using (screen recording software, timing software etc...) I would also recommend following https://www.speedrun.com/mcbe and asking there, there are a lot of people that can give you advice over there.
