Just finished playing through the game and I really loved it. So here I come trying to give it replayability :D I notice there are variables for patch, obviously I'm on the latest, what can I do on that patch?

It's been a while so I can't remember off the top of my head, but most relevant tricks (ex. Temple Skip, OoB, Photo Jump, Palace Sequence Break, etc.) are fixed from v1.2 onward. There's a few like Galerius Skip and Duli Key Swipe that still work post-patch, but there's only a few.

There's a Downpatch Guide in the Guides section that goes through how to downpatch to v1.0 or 1.1.
