If I have a new run in the same category, with the same parameters (partner), just that the date and time (obviously) is change, do I delete my old run and submit a new one, or just edit the old one?

Just submit a new run the same way you did the first time. Only the faster one will be visible on the leaderboard (after your new submission is verified), but slower runs will still be visible in your profile.
