I understand wanting a tutorial for the category but it's really not necessary. As for the jungle rollers skip, there is a video which shows you how to do it. With great gate skip there is a newer setup (which I assume you know) which isn't too hard to replicate and there is a tutorial for that too. I think the point is fair though. As for people who you say 'people trying any% on EMU for a few weeks until they get sub 1 without zig-zagging and then quit', these people wouldn't be interested in learning 100% in most scenarios because if their only goal is sub 1 then they haven't got enough interest in this game.

Well the main reason is that spyro 2 is a PS1 game, so the only accepted emulators are ones that emulate a playstation 1 console the best, the accepted emulators are the only ones that are known to be accurate and emulate a playstation the best. We are not looking for a 'PS1 FDS loads' emulator.
Well you can still run on psxfin, they just won't accept your runs on the leaderboard
Firstly there wouldn't be much point of NG+ as in the speed runs you gain the superflame ability through entering dragon shores anyway. People have done NG+ speed runs of the game, (example: ).
I think you should feel free to run it if you wish, I'm sure Jumpy or even other members of the community may be able to help if you need it. But as for the leaderboards there is slim to no chance of it being included.
Just to clarify, are you aware that ng+ in spyro 2 isn't running on a completed 100% file but is starting a new game with fireball after attaining fireball in another save.

Fighting Seto 2 and defeating him means that when you defeat all the mages you will be up against the final 6 instead of the final 7, final 7 being all of the final 6 + lab mage. This would effectively make the endgame easier.

Easy mode is a term runners use to describe getting good rng whilst playing a high-tier opponent in the cards which he plays against you. For example if Seto 3 played a B.Skull that would be considered an 'easy mode'.
