It could maybe be benefits, saving couple of seconds, bad thing about it is the addition of more RNG (enderpearl drop)

Well, I really don't think it would be a good strat based on how endermen spawn. You would have to place all of those blocks and hope that spawns. Doing a really fast bridge is definitely faster.
