playing perfectly leaves only the dragon remaining and leaves the player with 7 health so I'm fairly confident this is impossible

it is definitely possible to get 303 score if that is what this is about, it does however involve some luck I think
So getting 303 (or 302, sometimes the generator glitches) is possible. I think it definitely involves some amount of RNG - I've gotten it 2 or 3 times, and when I've tried to record it 4 or 5 times I've done the same as you have here...
Basically you need to use as few scrolls to level as possible. If you use a scroll at level 7, you'll gain 7 hearts but that same scroll counts for 15 hearts at level 15...which means if you manage to avoid using scrolls early on (i.e. you manage to get the 5 gold from chests plus maybe the gnome early) then you can get a full clear.
I managed to consistently get 303 quite a few times (before starting to speedrun the Any%). Yes maybe once or twice it seemed like I did everything perfectly, and could not max it out, but it seemed like the minority of cases.
