A neat category would be speedrunning the game dailies. Run could start upon gaining control of the game in the pokemon center after a fresh launch of the game, then you need to do the daily tasks. Spend 100 stamina, free daily pull, talk to a trainer. Run would end the moment you collect the daily 80 gems.
I suppose I'm just not entirely sure where the room for improvement would be with this kind of run. The run would essentially boil down to how fast can you spend stamina, which technically can change a considerable amount depending on when you decide to do the run (events that use a lot of stamina can sometimes be at the top of the list, or at the bottom), and I'm not personally a fan of runs that can only be done well at certain times of year. I'm going to have to say no to this one, purely because of how the only real variable in terms of time that can change is when the run is done, not skill, rng, or anything else really, so I wouldn't really consider this category to be fair.
