How to open some of these categories? Like Multi Mode, what do you do to open it?

You have to start the game, and lose. To the left of the "Play Again" button are arrows. They make the mod random. Clicking on the snake changes color. Clicking on an apple changes what you collect. Clicking on the cup changes the mod.
