Because it runs a lot faster than console. It runs at an extreme FPS rate faster than a vanilla N64 console. 

Since there's a lot of maps that lag on N64 are almost non-existent on emulator. Just because Project 64 is allowed on some games, doesn't mean that every community allows it.

Hei, what about everdrive, does anybody know how it runs on everdrive?

Everdrive is banned on most (if not all) N64 games. Due to it emulating ROMs instead of the actual game cart itself. So it would still classify as emulation.
